FUKAMUSHI YABUKITA ORGANIC CERTIFIED
This Sencha Fukamushi tea is excellent value for money with a very green cup with deposit, and lots of flavors including umami.
Fukamushi are teas that have been steamed longer than traditional sencha. This longer steaming allows a more diffuse transfer of heat in the sheets, also leading to breakage of the sheets during the various stages of manufacture. These teas are very rich, powerful, very vegetal and for some umami. You could say it's halfway between a sencha and a matcha, the liquor being very concentrated, very deep green, with generally a deposit of leaf particles in the bottom of the cup.

Location: Chiran area, city in southern Japan, near Kagoshima city.
Cultivar: Yabukita.
Harvest date: end of April, beginning of May
Preparation tips: Infuse this tea in a small teapot, ideally between 20 and 30cl. Place 5g of leaves in the teapot, cover with lightly mineralized water heated between 70 and 80 degrees, wait about 40 seconds, and serve. The way of serving is important, you have to pour 2cl, return to a horizontal position, then 2cl, etc... This allows the tea to be stirred in the teapot and allows a better diffusion of the flavors. This also promotes congestion-free service.
Garden management: The plantation is certified ORGANIC by JONA JP-BIO-005 and this tea is certified ORGANIC in France by Ecocert FR-BIO-01.
