JINSHAN PREQINGMING - HANGZHOU 2024
Produced in the style of Bi Luo Chun, this super premium green tea from the locality of Jinshan, near Hangzhou in Zheijiang, has fruity, zesty, and extremely herbaceous notes. The stages of its production are withering to soften the leaves and reduce their humidity, rolling by hand on woks heated to around 90-100 degrees, then final drying in the oven. The leaves are almost exclusively composed of young, extremely downy buds, which contributes to giving thickness and texture to the liquor.
It is a “Pre-Qingming” tea which means that it was harvested before the Qingming festival at the end of March. It is an altitude tea, harvested around 1000m
Brewing tips: This is a very high-end tea and we strongly recommend respecting the basic dosages as well as using quality water to brew this tea.
Quality water will be very weakly mineralized water. Check the dry residue on the label of the water you wish to use, a value between 20 and 100mg/L will be suitable. That said, this is not an infallible rule, some waters at 130mg/L work well (Volvic) while others below 100mg/L have less good results. Quite famous and inexpensive water is the source of the Grand Barbier which you will find at Carrefour.
Brew small amounts of tea in a small container. The ideal would be a teapot between 20 and 30cl maximum. Place 5 to 8g of leaves for 1 minute of infusion.
