Korean "Sejak" green tea produced in April 2024 in the Boseong region by the Choi family. This tea is produced by hand, the fresh leaves are pressed on a Wok like the Chinese technique found in the production of Zhijiang teas, longjing, bi luo chun, etc ... We find fresh, vegetal, and lightly roasted flavors.

Korean "Sejak" green tea produced in April 2024 in the Boseong region by the Choi family. The "Sejak" is the 2nd spring harvest, it occurs about fifteen days after the first harvest which is called "Woojeon" or "Ujon". This tea is produced by hand, the fresh leaves are pressed on a Wok like the Chinese technique found in the production of Zhijiang teas, longjing, bi luo chun, etc ... We find fresh, vegetal, and lightly roasted flavors.

The Choi family has been producing artisanal tea in Boseong for 80 years and the farm has been passed down from parents to children for several generations. The plantation has several certifications including organic certification but as these teas are very expensive and the imported quantities are small, we have not done the necessary documents to certify it organic in Europe.

Brewing tips: This is a high-end tea and we strongly recommend that you respect the basic dosages and use quality water to brew this tea.

Quality water will be water with very little mineralization. Check the dry residue on the label of the water you want to use, a value between 20 and 100mg/L will be suitable. That said, this is not an infallible rule, some waters at 130mg/L work well (Volvic) while others below 100mg/L have less good results. A fairly famous and cheap water is the Grand Barbier source that you will find at Carrefour.

Brew small quantities of tea in a small container. The ideal would be a teapot between 20 and 30cl maximum. Place 5 to 8g of leaves for 1 minute of infusion with water at 75 degrees.
