SENCHA YUTAKAMIDORI ORGANIC CERTIFIED 2024

Sencha produced in Minami Kyushu, Kagoshima in the south of Japan in April 2024. It is a fairly classic, vegetable, long sencha, with Umami notes, very present. It is a very balanced tea, without defects, and which will be very appreciated for its freshness and its sweetness.

Cultivar: Yutakamidori literally means abundant green. It is a type of tea tree much appreciated by farmers, especially in the south of Japan for its good productivity and resistance to different diseases. About 30% of Kagoshima tea fields, south of Japan are planted with this variety. It is quite rarely found in plantations further north because Yutakamidori is not well resistant to cold and frozen. We often find umami in teas produced with yutakamidori because they are generally shaded a few days before harvest, because this cultivar st quite powerful and develops bitterness.

Infusion tips: It is a high -end tea and we strongly advise to respect basic dosages as well as to use quality water to infuse this tea.

Quality water will be very weakly mineralized water. Check the dry residue on the water label that you want to use, a value between 20 and 100mg/l will suit. That said, this is not an infallible rule, certain waters at 130mg/L works well (Volvic) while others below 100mg/L have less good results. Quite renowned and inexpensive water is the source of the large barber that you will find at Carrefour.

Infuse small amounts of tea in a small container. The ideal would be a teapot between 20 and 30cl maximum. Place 5 to 8g of leaves for 1 minute infusion with 70 degree water.
