FINEST WHITE LONGJING 2024
Longjing green tea produced in Jiande, Zheijiang region at the end of March 2024.
It is an extremely rare tea, which we will perhaps see more widespread in the years to come because its quality is so interesting. The leaves come from a fairly recent cultivar called "Finest White" giving very light, white/cream buds, and reputed to have higher than average levels of polyphenols and amino acids.
The color of this tea is in line with its organoleptic properties, it is a vegetable green tea, but it is very supple, soft, with creamy, silky sensations. The roasting is present but does not dominate the whole, we find many vegetal flavors typical of Chinese spring teas.
The flavors are persistent, and you can make many infusions with this magnificent tea.
Brewing Tips: Weakly mineralized water around 75 degrees. Infuse 5g of leaves in a 35 to 30cl container, gaiwan, gongfucha teapot, and leave to infuse for approximately 1 minute.
