This Japanese tea consists of large shiny needles, very well made. The olfactory notes of the infused leaves are deep, vegetal, a little mineral, reminiscent of spinach or green beans. The liquor is a very beautiful pale yellow. A sweet flavor without bitterness opens with well-structured notes, evoking cooked vegetables, broad beans and boiled chestnuts.The liquor is creamy and exceptionally long in the mouth.The notes of the second and third infusions are more marked by vegetables and by a beautiful freshness. A magnificent tea, which will delight lovers of Japanese and Chinese green teas alike!

Location: Kawane, Shizuoka, Japan.
Cultivar: Koushun, sometimes spelled Koshun, is a cultivar with a very strong reputation in Japan. He is mainly planted in the prefecture of Shizuoka where its resistance to frost is very appreciated. Her reputation is due to its unique taste, with a strong umami.
Harvest date: Hand harvested on April 30, 2022

Preparation tips: Infuse this tea in a small teapot, ideally between 10 and 20cl. Place 5g of leaves in the teapot, cover with slightly mineralized water heated between 65 and 70 degrees, wait 40 seconds, and serve.
The plantation: The plantation is located in Kawane, a mountainous, wild region, nicknamed the Southern Alps, about fifty km from the city of Shizuoka. In the valley flows the Oigawa River in a luxuriant and totally preserved nature.
